Bikini

Makes enough for 10 servings

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Combine all the items inside a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Next, turn off the burner and leave to reach room temperature completely. Transfer into a sterilised bottle, close it keeping it in the refrigerator, it will last for around four weeks.

Preparing the Premix: Combine all the liquids in a sizeable container, allow it to infuse for 60 minutes, then filter it best through muslin, making it perfectly clear.

To serve: Pour 85ml from the premix into a mixing glass packed with ice, and stir gently for one minute until cold. Strain to a frosted cocktail glass or a similar vessel, decorate with the cranberries adding the final touch with a quick spritz of the essential oil over the drink.
